Soya Chunk masala(ସୋୟାବିନ୍ କଶା)

Ingredients:

  • Soya Chunks - 1 cup(ସୋୟାବିନ୍)
  • Onion(chopped) - 3( 2 for paste, 1 for saute)(ପିଆଜ
  • Tomato(cube size) - 2(ଟମାଟର)
  • Coriander Powder -1 tsp (ଧନିଆ ଗୁଣ୍ଡ )
  • Red Chilli Powder -1 tsp (ଲଙ୍କା ଗୁଣ୍ଡ)
  • Ginger Garlic Paste - 1 tbsp(ଅଦା ରସୁଣ ବଟା)
  • Garam Masala - 1/2 tsp (ଗରମ ମସଲା
  • Turmeric Powder - 1 tsp(ହଳଦୀ ଗୁଣ୍ଡ )
  • Cumin Seeds - 1/2 tsp (ଜିରା)
  • Oil -2-3 tbsp(ତେଲ
  • Salt to taste(ଲୁଣ)

Method:

  • Bring water to a boil. Turn off the heat and add the soya chunks and keep it aside for 10 minutes.
  • Then rinse soya chunks in fresh water and squeeze all the water out.
  • Do it twice to get rid of the raw smell. Keep the squeezed soya chunks aside.
  • Heat 2 teaspoons of oil in a pan. Add and fry the chopped onion till they are transparent.
  • Grind the sauteed onion and tomatoes to a smooth puree and set aside.
  • Heat a tablespoon of oil in a pan. Add cumin seeds and fry till they begin to change color.
  • Add the ginger garlic paste and fry for a couple of seconds.
  • Add the finely chopped onion and saute till transparent.
  • Then add the tomato onion puree and combine.
  • Add the coriander powder, red chilli powder, turmeric, sugar, salt and garam masala to it.


  • Combine and saute for a couple of minutes.
  • Now add the squeezed soya chunks to the tomato mixture and mix it well.


  • Add water.


  • Cover and cook on a low - medium flame for 10 minutes.
  • Serve hot with rice or paratha.

Soya chunk curry(ସୋୟା ବଢୀ ତରକାରୀ)

Ingredients:
  • Soya Chunk - 2 cup(ସୋୟା ବଢୀ)
  • Potatoes(cube size) -2(boiled) (ଆଳୁ
  • Tomato(paste) -2 medium(ଟମାଟର)
  • Ginger Garlic paste 4-5 tablespoon(ଅଦା ରସୁଣ ବଟା)
  • Onions - 4(3 for paste,1 for temper)(ପିଆଜ
  • Turmeric powder -1 tsp(ହଳଦୀ ଗୁଣ୍ଡ )  
  • Chicken masala powder - 2 tsp(ଚିକେନ୍ ମସଲା)
  • Red chilli powder -1 1/2 teaspoon(ଲଙ୍କା ଗୁଣ୍ଡ)
  • Cumin powder - 1/2 tsp(ଜିରା ଗୁଣ୍ଡ)
  • Coriander powder -1/2 tsp(ଧନିଆ ଗୁଣ୍ଡ )
  • Garam Masala powder -1 tsp(ଗରମ ମସଲା)
  • Salt to taste(ଲୁଣ)
  • Oil - 3-4 tbsp(ତେଲ)
  • Coriander leaves(chopped) - 2 tbsp(ଧନିଆ ପତ୍ର)
  • Water(ପାଣି)
Directions: 
  • Soak the soya nuggets in 4-5 cups of hot water for 20 minutes. Remove from hot water and wash under running water. Squeeze out excess water and keep aside.
  • Heat 2 tablespoon oil in pan, add a pinch of salt in it, add the soya nuggets and fry for 2-3 minutes. Remove and keep aside.
  • Heat 2 tablespoon oil, add chopped onions and a pinch of salt, fry till it turns golden .
  • Add ginger garlic paste, red chilli powder, turmeric powder, coriander powder, cumin powder and little water, stir it for 2-3 mins.
  • Add tomatoes paste into it, cook till oil separates out.
  • Now add fried soya nuggets and salt to it and stir it for 2-3 minutes.
  • Then add boiled potatos,garam masala and chicken masala and mix well.
  • Once everything is mixed properly add 2 cups of water, Cover the lid and allow it to boil till gravy becomes thick.
  • Garnish with freshly chopped coriander leaves and serve hot with rice/paratha.
